    Abstract

    The purpose of this study is to calculate the mass transfer coefficient of carbohydrates into glucose by hydrolysis process of cherry fruit. In the process of carbohydrate used in catalytic hydrolysis of diluted hydrochloric acid (HCl), because the carbohydrate hydrolysis reaction with water is very slow. Variables that run on this research is the concentration of hydrochloric acid 0.6 N, 0.7 N, 0.8 N, 0.9 N; and 1 N and the stirring time is 10 minutes, 20 minutes, 30 minutes, 40 minutes, and 50 minutes. From the results in trying to obtain the largest mass transfer coefficient at the time of 10 minutes hydrolysis with 1.0 N HCl concentration amounted to 0.008590 / sec. And diffusivitasnya value of 2,730 x 10-8 m2/detik, as well as the largest conversion is obtained at hydrolysis time 50 minutes with 1.0 N HCl concentration that is equal to 15.767%.
