Abstract
Anthocyanins are pigments which give most fruits and flowers red, blue, andviolet color. The sourceof anthocyanins is red dadap flowers. Anthocyanins dyes can be used as food additives. These dyes do not cause damage to food stuffs and they are not substance toxic to the body. Taking anthocyanins pigments of red dadap flowers was carried out by extraction. Batch extraction was performed in a threeneck flask equipped with a stirrer, thermometer, cooler, and water bath.
