Abstract
Coconut oil is a valuable part of coconuts and is widely used as an industrial raw material or as a cooking oil. Extracting the oil from coconut meat can be done in several ways. Intake of coconut oil that is being developed at this time is the method of fermentation using enzymes or microbes, which are one of the ingredients that can be used is yeast. This study aims to take coconut oil from coconut skim with fermentation method, by studying the influence of yeast weight and fermentation time on the amount of coconut oil obtained
